I would suggest that you check that oil pressure with a higher reading gauge just to verify if you have some thing stuck or not. Reason being if you have a relief valve or regulater valve stuck it can build very high pressure. And if I am not mistaken both are in the oil pan and not sure how easy or hard that might be to get the pan off.
